The idea

Seven pizzas.
That’s all.

Blu began on Dubai’s pop-up food circuit and grew into a line outside the door at the Umm Suqeim fishing harbour. The pizza is wood-fired, sourdough-crusted, Neapolitan — Napoli technique with bold Middle Eastern flavours.

The menu has never needed more than seven pizzas. No reservations. Walk-ins only.

The spaces

Every Blu is named for a natural element — earth, sea, mountains, plants. The newest, Blu Fiori in Riyadh, grows around sculptural timber columns like trees inside the room: sandstone, copper and wood around an open kitchen with two wood-fired ovens.
